Default Music that is like...
I'm looking for music with large scores, as in its not all the same level of loudness, it has highs and lows. Preferably this would be in the newer/alternative/rock/metal genres.

What you are looking for is Post-Rock and Post-Metal.

For Post-Rock try Sigur Ros, Godspeed You! Black Emperor, Slint (esp Spiderland), Red Sparowes, Explosions In The Sky.

Post Metal try Isis, Neurosis, Rosetta, Latitudes, Pelican, Bossk

Or you you want some prog try Opeth, Porcupine Tree, Tool, Dream Theater, Enslaved
