Psychological choices are different, you're comparing apples to oranges. Sexual attraction is based off of fixations, so it's more or less an addiction, I'm pretty sure if you spent your life straight, and you thought a lot about what it would be like to go the other way, you could get into it. In fact, I know that you can, because I started off that way. I didn't switch teams, I just developed fixations for the female body, and perversions.
You can more or less choose if you want, just like you can choose to smoke pot, or be a sadist.
