I'm going to go a little European here, but Within Temptation comes to my mind. Those guys should be HUGE over here but they're not (but I guess symphonic metal hasn't totally been successful at crossing the Atlantic yet).

I agree Rise Against aren't huge, not unknown, but not huge. They're really good though.
