For me it's probably J. G. Thirlwell. Not only is his music unique, diverse and amazing sounding, but he's really influenced both how I listen to music and how I make music. He opened my eyes to how the studio can be its own instrument and how a bunch of small things that sound rough, awkward and ugly on their own can be arranged in ways that sound fantastic.

Most bands would consider it a success to make an album that spearheads a genre. He did it twice in 2 years.

And he doesn't even consider himself a musician.

Ol' Dirty Bastard because his mind absorbed Soul, R&B, Jazz, Funk, and Hip Hop to spew his own music that sounded good to a huge population of music lovers and annoyed the rest.
