I do have impressive knowledge of cheese , In one of my old jobs I was a buyer for a supermarket & one of my jobs was putting together the stores cheese section.So I have vast knowledge of over 400 different cheeses
I always thought it was Parma ham that could only be made in parma , I had no idea it applied to Parmesan too.Mind you most of it is made in Reggina so they call it Parmesan Reggina so it`s probably not breaking any rules.
