The age of the animal does make a difference to you, actually :P Calf meat is called Veal, not Beef, Lamb meat is Lamb, Sheep meat is Mutton

Regarding the mechanical methods, they are not accurate, they are not humane, and they do not ensure a painless death. So yes, they're definitely more cruel than the stunning methods because of this.
