As far as watching the show and reading the books, I would almost advise watching the show first in order to get all your visual references ingrained in your head so when someone says "Ser Rodrik Cassel" in the book you know exactly who they're talking about it. It also eliminates the bias you'll inevitably have when the writers of the show change something, as you have no frame of reference to compare it to, that's what I've done for most of the Alan Moore movie adaptations and it has allowed me to enjoy both the movie and the comic (with the exception of The League of Extraordinary Gentlemen (2003) which was just pretty shit).

I'm not a big fan of doing that. For HP I was already really invested into the series by the time the films came out and didn't want to change anything in my mind about it. I guess it would be OK if I started watching the Game of Thrones before reading the books, but I'm already a decent amount into it so I think I'll just hold off for now.
