You should be very happy with just about any recording sold under the
Flamenco genre. There's also a 'new' Flamenco style out there now, it's like the difference between traditional old school jazz and fusion, it just incorporated a bit more variety in the rhythms and harmonies.
Paco De Lucia is probably the most recognizable name to western audiences, it's not 'always' instrumental though it shouldn't be hard to find more artists with this starting point - same as instrumental only compilations of his performances.
