+1 for Garageband, undoubtedly the most cost-effective way for multi-tracking. There are plenty of adapters (iRig etc.) which you can connect a guitar etc. via the headphone socket, or you can use the camera connection kit and a usb class complient soundcard (ie one that doesn't need a driver) for simultaneous recordings of different sources. Pretty kool.
