I just decided to be up front with whoever I interview with and tell them what happened, that I was let go for health reasons beyond my control that are now resolved. I can't exactly leave it off my resume because that job makes up the bulk of my professional experience, if I didn't include it I'd basically just look like a glorified babysitter. A lot of the parents still keep in touch with me and ask me to sit for them on occasion, so I'm lucky to have good references from them.
