You know, I could almost understand it if they were doing it so as to have a record for the cops or court or whatever. In the days before mobile phones that kind of on-the-spot evidence gathering would not have been possible. But sadly, I doubt anyone was thinking of that, and as you say, it was all about how many views they could get on YT or retweets or whatever the ****. Wonder if they stopped to think how they'd feel if they were the one getting attacked and everyone around them was just taking pictures?
Reminds me of a fantastic episode of "Black Mirror". Let me know if you want me to tell you about it, but the twist ending would spoil it for you if I told you. You've probably seen it anyway.
