You wanna slice the meat at a 45 degree angle against the grain. Also broil until it just about starts to crisp up on the edges.

They offer them in lamb/beef/or chicken at this place I go to in garden Grove called Garlic and chives. They refer to them as skewers however not kabobs as typically kabobs are meat in a round cut. Also you need to hit Los Angeles you can find authentic duck sauce and anything asian related you want to in LA.
