I don't know all his stuff, but I would probably pick
Little Red Corvette.
Some of his songs that were recorded by other people surprised me when I found out he wrote them, eg. Bangles, Sinead O'Connor, Martika.
Steven Wilson, surprisingly, is a fan; it's hard to think of two artists whose signature styles are so different, but Wilson has covered two Prince songs,
The Cross, and
Sign o' the Times.
