Well, I like solos that "serve the music" and aren't just gymnastics exercises, but that's most guitar solos.

Solos that serve the music can certainly be "virtuosic" or of the "shredding" variety, but they don't have to be. They could just be a couple notes, too. It's just a matter of what functions well musically and helps develop or add another perspective to etc. the song.
