Sabbath are still connected to blues music, Metallica are a band that's well into shedding the last few connections to the rock music of the 70's. Basically, Sabbath helped pioneed metal, but Metallica helped making it it's entirely own thing.
BUT... "Sabbath metal" and "Metallica metal" aren't a meaningful way in which to divide all existing metal.
