The OP made me think of the following clip, which also starts with some easy-to-understand rhythm, but then takes us through a bunch of different time signatures - so not rock 'n' roll, I'm afraid.
N.B. The clip is mistitled, and should be called From One to Nine. It's on the Moondog compilation album, The Viking of Sixth Avenue.
