Caramelized mushrooms and onions (sauteed in butter and garlic and balsamic beforehand), maple bacon, apple or pear, spinach, pesto, and peppers of any kind. Usually I do two kinds of cheese. (And good quality bread ofc) I like gouda and muenster together especially. Edit: I also loooove pulled pork on grilled cheese though at that point I suppose it's just a regular pulled pork sandwich. I've also put macaroni & cheese in them.
..But obviously if I'm very tired and/or have had too much wine then anything goes.
