Sure it's a process, but the name of the process isn't "skim". Skim milk is the product of the process you're talking about, but it's not the process itself. Similarly, light beer is a product of a process that makes it light beer, but the name of the process isn't "light". Nor is the process that makes Diet Coke called "diet". Nor is the process that makes seltzer water called "seltzer".
