Legend of Grimrock is really fun, but if we're keeping it old school, then Dungeon Master II is my personal favorite. Unreal levels of atmosphere in that game. The soundtrack is burned into my brain. It also has some really unusual ways of handling stats and such. Expect very few numbers, lots of bars to indicate relative strength instead, and cryptic symbols hinting what potions and spells do. It's not nearly as obtuse as this makes it sound like. Although reading the manual entry on how the spell system works is recommended. It's actually a very pretty and very action oriented game.

The first Lands of Lore is also a good DOS dungeon crawler with nice graphics, music and some interesting areas to explore.

Anvil of Dawn is another DOS game of the same sort that isn't mentioned a lot. I think it's a lot of fun and it has some clever ideas.

Heroes of a Broken Land is a really interesting dungeon crawler on Steam that mixes Heroes of Might & Magic style town building with old school dungeon crawling. You manage a bunch of teams of heroes, build bases and stuff. It's really original and I like it quite a bit.

Note: Some old dungeon crawlers play best if you have a full NUMPAD on your keyboard.
