Rice, beans, frozen/canned veggies, b12 and vitamin D is really all you need. I think a lot of people make it seem more expensive and unrealistic than it really is, and a lot of it has to do with really not knowing what to do with vegetables besides boiling them or adding them into other ****.
I could see how the lack of fresh produce sucks, but I wouldnt call it unreasonably difficult or expensive without them.
