I've seen all the movies mentioned here, including most of Jackie Chan and Jet Li's filmographies, including Fung Sai Yuk, armor of God, wheels on meals, etc.
The most entertaining fights for me are probably from The Legend of the Drunken Master, not the first drunken master movie, but the Jackie Chan produced film from the 90s. Jackie's drunken boxing in that movie is a blast.
Otherwise, I'll admit I find many of the movies kinda boring outside the fights. I remember the fights from Once Upon a Time In China 2 as being great (featuring Jet Li as Wung Fei Hung and also Donnie Yen).
Honestly, more modern forays into the genre are often as great as the old ones. Ong Bak was mentioned, which is great when he's not fighting westerners. Fearless was decent. The Raid is lots of fun and I also liked the Ip Man movies, though they sorta blend together for me.
