May I check to see if the instruction, Say "when"! is commonly known in the US and elsewhere? It's for when you are pouring a drink for someone and you'll keep going til they tell you to stop.
That's what makes this Cristina lyric so good:"Nobody says grace, nobody says when". It's like a pun about the way we use the verb "say" in set phrases, but also gives us Cristina's observation: nobody gives thanks, nobody says "that's enough". She very neatly tells us: We are all ungrateful and greedy. So, yeah, great lyric.
