Maynard out of Tool has some very interesting side bands which are kind of more experimental then anything but are still not full and interesting to listen too.
Black Label Society have an album called 'Hangover Music, Vol. 6' and its mostly slow Piano and acoustic guitars with the odd rocking song which compliments the album very well.
