sour cream chicken enchiladas


combine:
four boneless chicken thighs (you can use breasts, but i'd rather have dark meat)
one can of rotel tomatos (this is gonna be chopped tomatos and chilies)
one chopped sweet onion
one chopped bell pepper
one pealed chopped carrot
cumin/garlic/jalapeno to taste

combine in bakein dish, or crock pot,.......bake covered at 325 4 hours, or throw in the crock pot on low for the day

fork shred reserving two cups of liquid

combine liquid, one small tub of sour cream, and one small can of diced green chilies

soften corn tortillas in hot oil, then carefully roll will chicken mixture
assemble in bakein dish
top with sour cream mixture and bake covered until bubblein
uncover and top with cheese,.....or not,.....return to oven until slightly brown

serve with yellow rice and black beans


OR just chips and salsa
