Well, it could have been your mood I suppose. I myself thought he had the poorest performance of the entire cast. It was almost as if he were over-playing the character, if that makes sense. He turned the part into a caricature of what it should have been, making him funny yes, but not really realistic or easy to relate to. Just my opinion though...
And yes, I completely agree with you that the French actress was quite good, as well as the actor who played Col. Landa.
