Post rock is music that essentially takes a rock band and makes music that doesn't use your normal rock signatures, progressions, and so on. It takes a lot from ambient music, electronica, and I guess maybe shoegaze and krautrock, though I've never really listened to krautrock so I'm not sure on that. I guess that gets a little confusing because a lot of music does that these days, but here's some examples:

Slint was some of the earliest post rock:


The term has largely evolved into a specific sound that started with bands like Mogwai and Tortoise and mostly did away with vocals:



So I guess really post rock and math rock aren't that different, they both have to do with doing something not usually done in rock music but still using a normally traditional rock band. I've heard bands like Don Caballero described as some of the earliest founders of math rock and some of the big early post rock bands.
