He's dependent on caffeine for higher mental functions, that's probably what it is. So he decided to stop drinking coffee, big deal, but if it makes him an irritable ass about it, I feel like that shows very little control over his actions. For instance, when I completely stopped taking Adderall after taking it every day for 5 years(and adderall is a much more potent upper than caffeine), I felt sluggish and slow, but I never got angry about it.
So tell your fiance to man up and not be a bitch about quitting coffee, and don't break up with him, my parents get on each others nerves all the damn time but they still, to the core, love each other, even though they argue like bastards a lot of the time.

Study up bro: What are Symptoms of Caffeine Withdrawal?
It says caffeine withdrawal can cause mood swings. Not to mention headaches, which naturally lead to mood swings! It says it can last anywhere from 2-9 days, anytime beyond that point I'd suggest an 'alternative' solution to your problem.
