and by the spacey and dreamy bit I meant a lot of the bands I don't find interesting are the definitions of these words, and it's strange to me that I don't enjoy them cause I'm a sucker for both of those adjectives.

Well, Slowdive generally have a 'spacey, dreamy' sound so don't get your hopes up
. Shoegaze classics usually separate people; I've not much of a care for the more dream-pop side of shoegaze myself, but that's just who I am.
As for modern shoegaze, I find it's never exceptional, but it's rarely poor. Classic shoegaze is often one or the other; whereas modern never disappoints but never truly surprises/excites me either.
