It's not the most complex piece of music, but my favourite would be Romance Without Words - Faure. It's the epitome of French Romanticism ^_^

Holst - The planets (jupiter)
Mussorgsky - Pictures at an exhibition
Chopin - Fantasie Impromptu
Orff - Carmina Burana (unbelievable live!)
