That's not "exactly" anything. Cream is not a variation on milk. It's a component of milk, along with the water phase. Its not a different type of milk, its what you get when you remove certain parts which make milk what it is. When you remove the volume of water, it is no longer an aqueous emulsion and thus it is no longer milk. The only reason I'm pointing this out is that it's right...
