If only. It's really some of the best I've eaten. My daughter and me used to use the same recipe years ago and this is the first time trying it again since. I forgot how good it was.

Thick cut pepper bacon, yes. The cold ML sandwich had some of it chopped up on it with some mayo on the bread. Friggin amazing.

Chicken Taco's and Tortilla Soup for yesterdays games. With the soup, I used a crock pot and after about 5 hrs I didn't quite like the consistency, so I strained it and blended the remaining bits of veggies and beans, then poured it all back into the crock and let it go on low for a bit longer. It was absolutely amazing with a tomato soup-ish consistency.
The chicken taco's were excellent too. I'll be combining the chicken and soup later today in a test and maybe add another can of black beans. I'd have just done that to begin with and made Chicken Tortilla Soup, but I always have to consider the vegetarians in the house. |

For my birthday I’m going Creole, thematically. Shrimp and sausage gumbo, baked Mac and cheese, corn on the cob, collard greens, hush puppies… but should I go buttermilk cornbread or cheddar biscuits? And what for dessert? Top contenders are coconut cream, sweet potato, or pecan pie.

I tried my hand at a Vodka Sauce over the weekend. I never made one so I never realized how simple it is. My taste testers approved too. I had it with some penne pasta and some Italian sausage that was cooked in a crock for 6 hrs.

I had some nice soup yesterday, helped cook it too. but yeah most days are just food from dollar general and kind bars are one of the most healthy options. They got bread, I eat that sometimes too. Would be nice if they just had bagels, bagels would be nice. I eat those sometimes

I grabbed a box of Bubba Burgers the other day just for the hell of it and made one using a skillet instead of grilling. A little butter in the pan and then topped it off with sharp cheddar at the end. I put it on a toasted potato bun with onions, pickles, lettuce, mayo, and ketchup, and a side of jalapeno kettle chips. Dam good for a quick bite to eat. The smoke alarm only went off once.

My new fave thing is making pasta bundt bakes. Cook some spaghetti (keep it full length) until it's right before el dente. Drain and rinse it with cold water to stop the cooking. Now you just add WHATEVER along with lots of cheese and a couple of eggs. Pour it in a buttered bundt pan and bake until nice and golden brown. Once chilled a bit it'll slice just like a cake - the long strands of pasta help bind things along with the egg and cheese. It's fun coming up with new versions. I've done Turkey with American cheese, Italian cold cuts with Provolone, and even a turkey/stuffing/cranberry sauce one.
