Cheddar, blended with mustard seeds and ale. It's Welsh. It was recommended to me by a Welsh lad, from Wales.

And completely ruined the perfectly nice mental image I had of gruyere macaroni and cheese (god I'm actually starving to death right now, someone p l e a s e send me pasta via UberEats or something) beforehand. :c
