Of course, the accents aren't severe to you because you've been around it all of your life so you get used to it and adopt it. If you take someone from the north and send them to the south for the weekend it will be very severe because they aren't used to hearing the English language violated in that manner.

the second and third is just being polite and having manners. I wouldn't really call it a quirk either.

Part of chivalry being a dying art is on the other side of the coin. They don't have manners to appreciate when someone is being chivalrous and part of that is maybe because they don't see it often.
