Well, I've only read the first two (and have started on the third) but those were fantastic so I'd say just go chronologically...:\

The books aren't really that chronologically relevant and you can quite happily leap in the middle of them. The characters are established well enough each time that any references you're missing from previous books that involved them will tend to be very minor.

I started out with Thud! and ever since then, I can't stop reading his books. Pratchett could write about anything and make it interesting/funny/insightful.
