Have you checked out "The Dub Side of the Moon" by the Easy Star All Stars? One of the best reggae dub albums in my opinion. It's basically a cover of Pink Floyd's Dark Side of the Moon, but it's incredibly well done!

I love Sly & Robbie's cover of the Led Zeppelin classic D'yer Mak'er. Sly's crisp one drop drumming is a striking contrast to John Bonham's sledgehammer drum sound on Led Zeppelin's original version.
The vocalist is Mark Ice, a relative newcomer to dancehall music scene. Ice has sweet sounding voice than reminds me a lot of Johnny Clarke one of the first generation root reggae stars of the Seventies. |

Mos Def has an excellent album called Mos Dub. I think it's a mix tape. Not strictly covers per se but amazing mashups of Desmond Dekka and Jimmy Cliff with Mos Def lyrics. mixtapetorrents (dot) com has it I think.
