Struggle to replace keys with guitar when doing covers (Happy, All of Me, etc)

When doing my own arrangements of covers, I always struggle to find ways to replace piano/keys with just my guitar. On my version of "All of Me", I feel like I did alright... but for "Happy", I'm not...

Cubase LE comes with both the Firebox and the Firepod ($200 or $500 and 2 or 8 channels each). I use the Firepod and they work well together.

Audacity is pretty dang basic! Cubase LE comes free with a bunch of different firewires and you can pick it up for about $15 on ebay.
