Default Acoustic volume control

I have a Gibson Gospel acoustic with pickup built into the bridge. I want to be able to run it into our mixer board and "turn it up" a little for solo or fill in. We do not have anybody running the mixer , so what is the best way to do this? I thought about a preset volume level on the mixer with a "stompbox" to cut the feed on/off or eithre some typre of volume pedal.Any suggestions? I don't really need effects as I am playing in a gospel group.
