Cattle, sheep and pigs do tend to be less afraid than their wilder cousins (although many are still weary of people, there's just not much they can do about it standing in a pen). Most people will know this is because we have selected for friendlier animals, just like we've selected for cows that give more milk, hens that lay more eggs, dogs that are loyal and good at specific tasks etc. It's something that's been done for thousands of years and the observation that it is at all possible for animals to inherit from their parents a tendency to be nicer, bigger, of a specific colour etc. was one of the major observations supporting Darwin's theory of evolution ..
But it still doesn't explain why animals in the wild run away if they're intended to be our food .. Unless it is as you write; that God want us to be stimulated and have a little excercise.
