Actually, it's fairly straightforward. The vast majority of animals lack the physical ability to display consent to a human, as well as the intelligence required to fully understand the situation, and our differences in anatomy would only cause serious pain to the animal.
Although, apparently dolphins (who are very intelligent) love to go around raping other animals, including humans. Those squeaky little masochists.
