I think it's a really uncommon thing to find in Danish restaurants. I Googled a bit, just out of curiosity. Confirmed one place that had "taco Cabeza", but that was with cow tongue. Never had that either, but it's just a muscle, so I imagine it tasting much like regular cow meat or maybe the heart would.
I just glanced at the thread name and can't remember it got from there to me talking about how what part of a cow would taste like.
