The Byrds
The Byrds is one of the most under-rated band ever, they helped launch the whole Country/Folk rock genre of the 70's. The Byrds did a lot of cover songs by Bob Dylan, their reinterpretation of his songs are brilliant. David Crosby of CSN&Y was from the Byrds - I don't know if I should mention that because I don't know how well he is liked.

Roger McGuinn and Clarence White were two amazing guitarist, who influence other guitar players, they contribution to the developement of guitar-playing in R&R usually goes unnoticed.
