At least "Moonshiner" and "House of the Rising Sun" predate Dylan as well although I suppose you could say he brought them to the public's attention.

My favorite is probably "I Shall Be Released" by either the Band or Chrissie Hynde or "Ring Them Bells" by Ron Sexsmith, Sheryl Crow and Elvis Costello.

Guns N Roses, but i'm not sure of the dialogue of the phone part has a story, but it kind of annoys me. Great song, both original and cover.

I like this Spanish cover of Stuck Inside of Mobile with the Memphis Blues Again, by Kiko Veneno and Juan Perro.

A comment I've seen in one of the YouTube videos of it (I translate): "Considering how stroppy he is, if Dylan finds out about this, he sends a pair of thugs to Kiko's home."
