Does anyone know of any electronic/dance/trance/dubstep/etc that highlights out of the ordinary sounds/instruments like this song? I absolutely love this.

Shpongle do some interesting things with everyday and simple sounds. That track reminds me a little of Shpongle, albeit a more mainstream, eurodance kinda sound.

This is more ambient and features recorders played by Dorothee Oberlinger.
You might like the band Flutronix. Pan and native american flute as well as Didgeridoo is often used in electronica.
Perhaps you should check out remixes by Kygo or Aphex Twin.
