It kinda depends on the tone with which that's said :P If it's a bored kind of not really looking for an answer I say mostly rock, but a bit of everything, mainly because they're unlikely to differentiate the general genres from the subgenres I don't listen to :P

If it's a little more "oh I like music, I'm actually interested in what you have to say", I usually say that I'm happy to listen to anything once, and that there are few genres I don't like anything from. Most of the music I like falls within the general bounds of "Rock" though.

I've found that if it's a throwaway remark there's no point in trying to go into detail, cause it just gets a blank. In the majority of situations though I've ended up having reasonably good conversations, mainly because I'm good at directing people onto subjects they want to talk about :P

Usually when that happens, 9 time out of 10 the person still doesn't know what you are talking about. They are just trying to save face. Sometimes I feel like messing with them and I ask them what their favorite album of theirs is. "Oh I uhh...you know..uh that one album. I like all their stuff, really."

Haha yeah, I suppose they could be bluffing. I usually accept these things because these conversations are always uncomfortable. If it's someone I like and they're like "Oh, I really love N Dubz" I am going to feel really bad when I throw up in their face.

What I find the biggest problem is the "mis-named genres" debacle which has been mentioned so far. If you try and go into any detail or specifics, the chances are the person you're talking to is going to completely misunderstand what you're saying. Or say something like "I like Dance".

My usual response is that my taste has nothing to do with genres, I need my music to have character. if there is more than a half dozen artists that do something similar, or their style is just straight ahead with no real variation or experimentation, odds are I won't like it.
