A few suggestions from various genres, including album suggestion:

B.B. King - Any album
Pilate - Caught By The Window (like Coldplay without the repetitiveness)
Pinback - Blue Screen Life
O.A.R - Stories Of A Stranger (not as good as the older stuff but more accessible)
Piano Magic - Disaffected (Hard to recommend an album, they're all so different)
G. Love & Special Sauce - Not sure about albums, hip-hop, trip-hop ish
Richard Marx - Greatest Hits (Cheesey ballads, the missus will love it)
Tom Waits - Small Change
Pat Metheny Group - Speaking Of Now (Jazz)

Nina Simmone, I've never know anyone to just step up and ask for her. Its usually 50 year old jazz nerds that came into the store.

Download Drive-By Truckers - Sinkhole, just because I think its their best song, and they really dereve to get their name out there, why they havn't broken the gates to the masses I have no idea.

And speaking of southern rock, you should check out some My Morning Jacket.
