I made scotch eggs for the first time about a week ago. Came out pretty well.

^dude those have been blowing the **** up lately.
I'm seeing them everywhere.

Been thinkin up a veggie friendly one, something with eh eh mushrrooms eh eh instead of meats.

Hard boil however many eggs you want.
Peel the eggs.
Prepare your banger meat (shut up Batlord) by adding finely chopped onions. I like to use maple bangers so there's a sweet and savory thing going on.
Coat the eggs in flour.
Make the banger meat into a patty and wrap the egg in the meat.
Coat the meated egg in whisked egg.
Coat the egged meated egg in panko crumbs or the breadcrumbs of your choice.
Bake in the oven at 375 degrees for 30 minutes or until the banger near by the egg is no longer pink.
Eat yo eggs.
