My new fave thing is making pasta bundt bakes. Cook some spaghetti (keep it full length) until it's right before el dente. Drain and rinse it with cold water to stop the cooking.

Now you just add WHATEVER along with lots of cheese and a couple of eggs.

Pour it in a buttered bundt pan and bake until nice and golden brown. Once chilled a bit it'll slice just like a cake - the long strands of pasta help bind things along with the egg and cheese.

It's fun coming up with new versions. I've done Turkey with American cheese, Italian cold cuts with Provolone, and even a turkey/stuffing/cranberry sauce one.




Occasionally use the pan for more tradition things too.....

In case it ain't clear, the advantage of the bundt pan and greasing it first with butter (unsalted!) is you get lots of crispy brown edging.

Tons more than if you used a normal 9 x 13 baking dish.

Those are some epic episodes. Alex is a force of nature.

Edit: Looking back at some of my posts, "I" gets a lot of use. Gonna try and curb that.

We still have a running joke here from a Chopped episode in which the contestants cooked from a basket including wild boar and spelt. Alex Guarnaschelli got all hot and bothered in praising someone's dish and commented, "The spelt really INFORMS this boar."

I don't recall that one. Since I moved I haven't made the effort to keep up much.

I still have a few of season 5 and the entire season 6 of Somebody Feed Phil to catch up on. One of my favorite food shows.

LOL!

The worst is when a new season of Top Chef contestants have to do a fancy high end meal for a whole group of past Top Chef season contestants.

They all try and outdo each other coming up with the most pretentious and long winded critiques of the new season's chefs - who are usually backstage watching on monitors.
