I would sometimes say "I could care less...." wait for someone to inhale and be about to correct me "...but I can't be bothered".

I disagree with that, there has to be other examples where the "n't" is drop otherwise there not much reason to think that that statement was started by people who could have a speech impediments or oral motor issues. Also "I could care less" might not even start by people who disregard rules of grammar or people don't think about the logical ramification of what they say, but it simply come down to an example of "whisper down the lane" where the "n't" is heard and people just repeat what they hear.

I find that I generally say, "I could NOT care less," with unnecessary emphasis on the word, 'not.' Most people 'round these here parts say, "I could care less."

I don't correct them or anything. I mean, I know what they mean when they're saying it, and that's enough for me. Personally, though, I wouldn't use the incorrect form. I don't hold others to the same grammatical standards, because conversational English in America is so far removed (in far more ways than just this) from more "literary" or "academic" English.

I'm most bothered by the elementary mistakes, like to/too, your/you're, and their/they're/there. Today, I again encountered “defiantly” (definitely). That one gets to me too.

Some of the errors might be typographical errors (e.g. to/too), sometimes they overlooked, but I'm sure there are people who don't know the difference between various homophones.

"Defiantly" might arise from spell check replacing a mispelling of "definitely." Still that is two mistakes 1) a mispelling and 2) not paying attention to spell check. I think it comes down to not being careful what one writes. When I see those mistakes I kinda wonder how many people actually take time to do a quick proof reading of what they write.

I have to admit colour spelt "color" sounds weird when I read it. It kind of sounds like "col-lore." Colour seems to fit the pronunciation a lot better.

However the spelling of "organizing" is better than "organising."

I don't really mind the phrase "I could care less." I always thought it implied the person did "care" but came to the point where he's questioning that (usually out of some frustration).
