Sliced bread was a pretty cool idea, but of course it`s only popular thanks to the guy who invented the whole walking-on-two-legs concept. If he hadn`t come up with that first, making a sandwich would`ve remained really tricky.

By extension I'd say the printing press comes second. Not only did it greatly reduce the grueling process of handwriting copies, but also made books more affordable to the masses. This in turn helped to increase overall literacy and make knowledge and education in general more inclusive.
