That's what happened at my parents' house, when the toilet flooded overnight the water got underneath the linoleum flooring, soaked into the wood beams, and then flowed down to the room below (second floor washroom). There wasn't a lot of visible water damage, nothing that couldn't easily be fixed with new plaster (yeah, old house) and a paint job.

But then about 3 years later, my dad ripped out the floor in that washroom to put in ceramic tiles, only to discover that there was some mold. So he hired a contractor to remove and replace the sub-flooring, and underneath there was significant mold growth along the wooden beams, stretching out to the hallway. So everything had to be replaced.
